A few notes:

• Assume all blended drinks are blended with ice.
• Assume all other drinks contain ice unless the recipe calls for “straining” or “up”
• “7” refers to 7 Up, Sprite, or whatever lemon/lime soda your bar uses.
• “Lime” as an ingredient refers to Rose’s Lime Juice. Do not substitute pure lime juice.
• Any 2 liquor drinks with cream can be (and often are) made into ice cream drinks my reducing the pours from ¾ to ½ oz. and blending with 4 oz. ice cream (cfr. Brandy Alexander 1 & 2).
• Most shots can be equally enjoyed as a drink. Simply build over ice in a rocks glass. (this is generally not the case with really nasty-tasting “dare” shots)
• Shots described as “build” drinks are not chilled, unless otherwise specified.
• The “Classic Cocktail” drinks are the Gibson, gimlet, Rob Roy, Manhattan, Martini, and Old-Fashioned. These drinks all receive 2 ½ oz. of base liquor. A good way to remember this is with a little mnemonic: “Gibson Gimlet and Rob Roy were Old Fashioned; they liked to go to Manhattan to drink Martinis.”
• The garnish “flag” simply means whatever fruit is indicated attached to a cherry with a cocktail pick (e/g/ orange flag, pineapple flag).
• 7 Up is one of your best friends. When it comes to mixed fruity drinks that require shaking, always top with 7 Up. It allows you ton “fudge it” if your drink comes up a little shorter.
• A sour can be made with nearly any liquor and several liqueurs. The basic formula: 1 ¼ liquor, 4 oz. sour mix, shake, splash 7 Up. Highball glass. Garnish with orange flag.
• A Stone Sour is similar, only sub 2 oz. of OJ for 2 oz. of sour mix.
• A Collins is also similar to a sour, the only difference being that soda is used instead of 7 Up. Some are known by their first names, though:
• Tom Collins: gin.
• John Collins: whiskey.
• Michael Collins: Irish Whiskey

Drink Liquor Portions

While certain recipes may vary widely, the following are meant to serve as general guidelines for determining the right amount of liquor to use in certain types of drinks.

Rocks/Shots: 1 ½ oz.

Highball: 1 ¼ oz.

Classic Cocktail: 2 ½ oz.

Two liquor rocks: ¾ oz. + ¾ oz.

Juice Drinks: 1 ¼ oz. plus mixers

Two-Liquor Juice: 1 ¼ oz. base liquor + ½ oz. modifying liqueur + mixer

or

¾ oz. + ¾ oz. + mixer

Three-liquor Juice: ½ oz. + ½ oz. + ½ oz. + mixers

Nails/ Cream nails: 1 oz. base liquor + ½ oz. modifying liqueur (+ 1 oz. cream)

Two liquor coffee/ ¾ oz. + ¾ oz.

Other useful terminology:

• A “buck” is a highball made with ginger ale (e.g gin buck).
• A “Presbyterian” is a highball made with half soda water, half 7 Up (e.g. whiskey Presbyterian).
• A “Rickey” is a highball made with soda.
• A “nail” is a drink which is made from a base liquor and a modifying liqueur.

• Grenadine- cherry-flavored syrup found in every bar.
• Rose’s Lime- a brand of sweetened and concentrated lime juice found in every bar.
• Sour mix- a lime-based mixture, similar to limeade, used as base in a number of cocktails and margarita mixes. Also called “sweet and sour” mix.
• Simple syrup- a concentrated sugar water, made by combining equal parts sugar and boiling water, that is used as a substitute for sugar in many drink recipes.

• “Up”- a drink served with no ice
• “Neat”- a drink served with no ice, at room temperature (unchilled)
• “Mist”- a drink poured over crushed ice
• “back”- a drink served in a separate glass from the main drink ordered (e.g. “scotch neat with a water back” means a shot of unchilled scotch and a glass of water)
